Château Haut-Brisson: Harvest 2021

The 2021 harvest has just ended . This is always an intense period of work in the vinyeard and in the cellar.

This year we carried out “integral vinification” in barrels. This means that, for part of our production, the winemaking process will take place in contact with the wood, in the barrels, including maceration and fermentation (alcoholic and malolactic). During these stages, we will practice a regular “pigeage” in order to promote the contact of the grape skins with the juice, and there to release more flavors and aromas. This method also aims to soften tannins, bringing thus more roundness to the wine.
